Wine Notebook, Part 31 (October 24, 2007)

I visited the Ancaster Old Mill today. This
historical mill is perfectly situated in the midst of
a cascading waterfall down the Ancaster section of
the Niagara Escarpment. It's a fancy dining
establishment that takes its food, wine and service
very seriously. Executive Chef Jeff Crump presides
over a passionate promotion of organic food that is
grown locally. His intimate collaboration with local
farmers brings an earth to table experience. Two
dishes to be experienced are the Forsyth Farm Lamb Linguine Bolognese
with fresh herbs & parmesan cheese and the Oven Roasted Organic Salmon Filet
on colcannon potatoes with cider & whole grain mustard vinaigrette.

Single Vineyard Malbec 2005- (Chile)
Deep intense red. Dusty earth, ripe red currants and sweet spice notes on the nose. The wine's full body and integrated flavors reveal black cherry, berries and vanilla - chocolate flavors. This aromatic wine has firm tannins, excellent structure and beautiful complexity! It has a long and satisfying finish. The fruit comes from 60 year old vines in the Lontue Valley which is a dry coastal area. Aged 12 months in 50% French and 50% American oak barrels. Chilean Malbecs tend to be less muscular than their Argentine cousins. This wine has superb finesse. Congratulations to Sommelier Don Miller for adding this winner to his wine list.
