Garlic's is the top dining spot in London.  The restaurant has the most cozy ambience, attentive service, and healthy, delicious cuisine. They aim to provide "upscale rustic cuisine."

The establishment opened in 1993, with Edin Pehilj managing since '97 and then taking ownership in 2006.  He has not only kept up with cutting edge dining trends, he's provided leadership in this regard as well.

"New trends in food selection and preparation are emerging at a rapid pace," says Mr. Pehilj.  "People are asking, 'what should I be eating to be healthier.'  And that's our focus: to source and prepare the healthiest and freshest foods possible."

He went on to describe how he finds food-supply partners with whom he can meet in the "middle of the bridge," those who feel the same way about quality products.  "This is what gives the consumer ultimate joy. It's what John (Fancsy)  does when he makes his wine [referring to the spectacular new wine from Viewpointe that we were tasting together].  He compared the passion at Garlic's to the obvious passion at Viewpointe. "It's clear that we both aim to provide the most beautiful product possible..."

"Our diners have been very positive and receptive to this."  Mr. Pehilj explained his commitment to contributing to a greener world for the next generation, "... for our kids; sourcing healthy, sustainable food is an important part of this."

Garlic's is fortunate to have an Executive Chef who shares this passion for quality food that's fresh and healthy.  Chef Wade Fitzgerald came over to describe his food philosophy, and provided helpful hints on what to pair with the Viewpointe Cabernet Franc: Roast Lamb was his recommendation.

Roasted maple-bacon and root vegetables, Mike "The Herbman's" fingerling potatoes with pesto
EVERSPRING FARM'S MUSCOVY DUCK
Creamed Yukon potato, maple roasted root vegetables, cranberry chutney and stock reduction
BROWN BUTTER ROASTED NATURALLY RAISED ELK RUMP
Butter poached tarragon mushrooms, roased fingerling potatoes and tomato relish

The food was superb this fine day. The cozy atmosphere was hard to leave behind.  I obtained a copy of the informative newsletter near the front door on the way out.
